A healthy twist on classic pad thai using zucchini noodles and shrimp.
Ingredients

- 2 medium zucchinis, spiralized
- 1 pound shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1/4 cup chopped peanuts
- 2 green onions, sliced
- 1/4 cup bean sprouts
Instructions
- Spiralize the zucchinis and set aside.
- Heat oil in a pan over medium heat.
- Add garlic and shrimp, cooking until shrimp is pink.
- Stir in soy sauce, fish sauce, and lime juice.
- Add zucchini noodles and cook for 2-3 minutes.
- Top with peanuts, green onions, and bean sprouts before serving.
Notes
- Adjust sauces to taste.
- Serve immediately for best texture.
- Store leftovers in an airtight container in the fridge.
