Description
Zucchini fritters are crispy patties made from grated zucchini, flour, eggs, and seasonings, served with a refreshing yogurt dip.

Instructions
- Wash the zucchinis and shred them using a grater. Squeeze out excess moisture using a clean kitchen towel.
- In a large mixing bowl, combine the grated zucchini with salt and let it sit for 5 minutes. Then add flour, eggs, Parmesan cheese, black pepper, garlic powder, onion powder, and parsley. Mix until well combined.
- Heat a non-stick skillet over medium heat and add oil. Scoop about 2 tablespoons of batter for each fritter and flatten slightly. Cook for 3-4 minutes on each side until golden brown.
- In a small bowl, mix Greek yogurt, lemon juice, minced garlic, salt, and pepper to make the yogurt dip. Serve alongside the warm fritters.
