Description

A delightful frittata combining fresh zucchini and rich cheddar cheese, perfect for any meal of the day.


Ingredients

  • 1 pound zucchini (about 2 small zucchini)
  • 3 tablespoons unsalted butter
  • 1/3 cup finely chopped shallots
  • Salt and freshly ground black pepper to taste
  • 8 large eggs
  • 1/3 cup heavy cream
  • 1 1/4 cups (5 oz) shredded Cheddar cheese

Instructions

  1. Preheat your oven to 325°F.
  2. Grate the zucchini using a food processor or box grater, then wring it dry with paper towels.
  3. Melt the butter in a skillet over medium heat, add shallots and zucchini, and cook until tender, about 7-8 minutes.
  4. In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
  5. Combine the cooked zucchini mixture with the egg mixture and pour back into the skillet.
  6. Bake for 25-30 minutes or until set.
  7. Cool slightly, slice, and serve warm or at room temperature.
