- 1 pound zucchini (about 2 small zucchini)
- 3 tablespoons unsalted butter
- 1/3 cup finely chopped shallots
- Salt and freshly ground black pepper to taste
- 8 large eggs
- 1/3 cup heavy cream
- 1 1/4 cups (5 oz) shredded Cheddar cheese
Instructions
- Preheat your oven to 325°F.
- Grate the zucchini using a food processor or box grater, then wring it dry with paper towels.
- Melt the butter in a skillet over medium heat, add shallots and zucchini, and cook until tender, about 7-8 minutes.
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
- Combine the cooked zucchini mixture with the egg mixture and pour back into the skillet.
- Bake for 25-30 minutes or until set.
- Cool slightly, slice, and serve warm or at room temperature.
