Ingredients

- 1 cup wild rice
- 1/2 cup dried cranberries
- 4 cups vegetable broth
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped walnuts
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse the wild rice under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion and celery, sauté until softened.
- Add wild rice and vegetable broth to the pot.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in cranberries and walnuts, cook for an additional 5 minutes.
- Season with salt and pepper, then serve warm.

- Adjust cooking time based on rice package instructions.
- Can substitute walnuts with pecans or almonds.
- Add herbs like thyme or rosemary for extra flavor.
