Description

A refreshing and vibrant drink combining tangy lemons and sweet raspberries, topped with whipped cream.


Ingredients

  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup fresh raspberries (plus extra for garnish)
  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • Ice cubes

Instructions

  1. In a blender, combine lemon juice, sugar, raspberries, and 1 cup of cold water. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher, pressing on the pulp to extract liquid.
  3. Add remaining 3 cups of cold water to the pitcher and stir well. Adjust sweetness as needed.
  4. In a mixing bowl, whip the heavy cream and vanilla extract until soft peaks form.
  5. Gently fold 1 cup of the pink lemonade mixture into the whipped cream.
  6. Fill glasses with ice cubes, then pour in the lemonade mixture.
  7. Top with a dollop of whipped pink mixture.
  8. Garnish with fresh raspberries and a lemon slice.
