Ingredients

- 1 tablespoon olive oil
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a pan over medium heat.
- Add mixed vegetables and stir fry for 5-7 minutes.
- In a bowl, mix peanut butter, soy sauce, honey, rice vinegar, garlic, and ginger.
- Pour the peanut sauce over the vegetables and stir well.
- Cook for another 2-3 minutes until heated through.
- Serve over rice or noodles.

- Add crushed peanuts on top for extra crunch.
