- 2 cups cottage cheese
- 3 large eggs
- 2 cups frozen mixed vegetables (peas, carrots, corn, etc.)
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Olive oil for greasing the pan
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9×9 inch baking dish with olive oil.
- Thaw frozen mixed vegetables and drain excess liquid, or chop fresh vegetables into bite-sized pieces.
- In a large bowl, mix together cottage cheese, eggs, garlic powder, onion powder, salt, and pepper until smooth.
- Fold in the thawed mixed vegetables and half of the shredded cheddar cheese.
- Pour the mixture into the greased baking dish and sprinkle the remaining cheddar cheese on top.
- Bake for 25 to 30 minutes, until the top is golden and set.
- Cool for a few minutes before serving. Optional: garnish with fresh herbs like parsley or chives.
