Description

A delicious and nutritious casserole combining creamy cottage cheese, protein-rich eggs, and a medley of colorful mixed vegetables, baked to perfection with a golden crust of melted cheddar cheese.


Ingredients

  • 2 cups cottage cheese
  • 3 large eggs
  • 2 cups frozen mixed vegetables (peas, carrots, corn, etc.)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Olive oil for greasing the pan

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9 inch baking dish with olive oil.
  2. Thaw frozen mixed vegetables and drain excess liquid, or chop fresh vegetables into bite-sized pieces.
  3. In a large bowl, mix together cottage cheese, eggs, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fold in the thawed mixed vegetables and half of the shredded cheddar cheese.
  5. Pour the mixture into the greased baking dish and sprinkle the remaining cheddar cheese on top.
  6. Bake for 25 to 30 minutes, until the top is golden and set.
  7. Cool for a few minutes before serving. Optional: garnish with fresh herbs like parsley or chives.
