Ingredients

- 3 cups mashed sweet potatoes
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup chopped pecans
- 1/2 cup rolled oats
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix mashed sweet potatoes, almond milk, maple syrup, vanilla, cinnamon, and nutmeg.
- Spread the mixture in a baking dish.
- In another bowl, combine pecans, oats, and brown sugar.
- Sprinkle the topping over the sweet potato mixture.
- Bake for 30-35 minutes until the top is golden.
Notes
- You can use coconut milk instead of almond milk.
- Store leftovers in the fridge for up to 3 days.
