Description

A fresh and healthy vegan summer rolls recipe that is gluten free.


Ingredients

  • Rice paper wrappers – 10 pieces
  • Rice noodles – 100g
  • Cucumber – 1, julienned
  • Carrot – 1, julienned
  • Red bell pepper – 1, julienned
  • Avocado – 1, sliced
  • Fresh mint leaves – 1/2 cup
  • Fresh cilantro – 1/2 cup
  • Lettuce leaves – 4, torn
  • Dipping sauce – 1/2 cup (such as peanut or soy sauce)

Instructions

  1. Cook the rice noodles according to package instructions.
  2. Prepare all vegetables by cutting them into thin strips.
  3. Soak each rice paper wrapper in warm water for about 10 seconds until soft.
  4. Lay the softened wrapper on a clean surface.
  5. Add a small amount of rice noodles and a mix of vegetables on the lower third of the wrapper.
  6. Add mint and cilantro on top.
  7. Fold the sides of the wrapper over the filling and roll tightly from the bottom up.
  8. Repeat with remaining wrappers and filling.
  9. Serve with dipping sauce.

Notes

  • Keep the rolls covered with a damp cloth to prevent drying out.
  • Feel free to add other vegetables or herbs as desired.
