Description
A fresh and healthy vegan summer rolls recipe that is gluten free.
Ingredients
- Rice paper wrappers – 10 pieces
- Rice noodles – 100g
- Cucumber – 1, julienned
- Carrot – 1, julienned
- Red bell pepper – 1, julienned
- Avocado – 1, sliced
- Fresh mint leaves – 1/2 cup
- Fresh cilantro – 1/2 cup
- Lettuce leaves – 4, torn
- Dipping sauce – 1/2 cup (such as peanut or soy sauce)
Instructions
- Cook the rice noodles according to package instructions.
- Prepare all vegetables by cutting them into thin strips.
- Soak each rice paper wrapper in warm water for about 10 seconds until soft.
- Lay the softened wrapper on a clean surface.
- Add a small amount of rice noodles and a mix of vegetables on the lower third of the wrapper.
- Add mint and cilantro on top.
- Fold the sides of the wrapper over the filling and roll tightly from the bottom up.
- Repeat with remaining wrappers and filling.
- Serve with dipping sauce.
Notes
- Keep the rolls covered with a damp cloth to prevent drying out.
- Feel free to add other vegetables or herbs as desired.
