A delicious and healthy vegan spinach quesadilla recipe.
Ingredients

- 2 cups fresh spinach
- 1 cup vegan cheese
- 4 whole wheat tortillas
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Heat olive oil in a pan over medium heat.
- Add spinach and cook until wilted.
- Mix in garlic powder and onion powder.
- Spread spinach mixture on half of each tortilla.
- Sprinkle vegan cheese over the spinach.
- Fold tortillas in half.
- Cook each quesadilla for 3-4 minutes on each side until golden brown.
- Slice and serve warm.
Notes
- Serve with salsa or guacamole.
- You can add other vegetables like bell peppers or mushrooms.
