A delicious vegan spaghetti sauce made with fresh ingredients.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can (28 oz) crushed tomatoes
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and garlic, sauté until fragrant.
- Stir in diced carrot, bell pepper, and zucchini, cook for 5 minutes.
- Add crushed tomatoes, oregano, basil, salt, and pepper.
- Simmer for 20 minutes, stirring occasionally.
- Serve over cooked spaghetti.
Notes
- Adjust seasoning to your taste.
- Add red pepper flakes for heat.
- Store leftovers in the refrigerator for up to 5 days.
