Description
A delicious vegan version of the classic sloppy joes.
Ingredients
Scale
- 1 can of lentils, drained
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 cup of tomato sauce
- 2 tablespoons of brown sugar
- 2 tablespoons of soy sauce
- 1 tablespoon of mustard
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Hamburger buns
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and bell pepper, sauté until soft.
- Add garlic and cook for 1 minute.
- Stir in lentils, tomato sauce, brown sugar, soy sauce, and mustard.
- Simmer for 10 minutes, stirring occasionally.
- Season with salt and pepper.
- Serve on hamburger buns.
Notes
- Serve with pickles for extra crunch.
- Store leftovers in the fridge for up to 3 days.
- Can be served with a side of fries or salad.
