Description

Vegan shakshuka is a flavorful dish made with tomatoes, peppers, and spices, served with chickpeas.


Ingredients

  • 1 onion, chopped
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell peppers, cooking until soft.
  3. Stir in garlic, cumin, and paprika, cooking until fragrant.
  4. Add diced tomatoes and chickpeas, season with salt and pepper.
