- 1 onion, chopped
- 2 bell peppers, chopped
- 3 cloves garlic, minced

- 1 teaspoon paprika
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell peppers, cooking until soft.
- Stir in garlic, cumin, and paprika, cooking until fragrant.
- Add diced tomatoes and chickpeas, season with salt and pepper.
- Simmer for 10-15 minutes until thickened.
- Garnish with fresh parsley before serving.
