Description

A delicious vegan quiche that is gluten-free and egg-free.


Ingredients

  • 1 cup gluten-free flour
  • 1/4 cup olive oil
  • 1/4 cup cold water
  • 1 cup silken tofu
  • 1/4 cup nutritional yeast
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix gluten-free flour, olive oil, and cold water to form a dough.
  3. Press the dough into a pie pan to form the crust.
  4. In a blender, combine silken tofu, nutritional yeast, turmeric, garlic powder, salt, and pepper. Blend until smooth.
  5. Stir in spinach, bell pepper, and onion into the tofu mixture.
  6. Pour the filling into the crust.
  7. Bake for 30-35 minutes until set.
  8. Let it cool before slicing and serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • You can add other vegetables as desired.
  • Serve warm or cold.
