A delicious vegan quiche that is gluten-free and egg-free.
Ingredients

- 1 cup gluten-free flour
- 1/4 cup olive oil
- 1/4 cup cold water
- 1 cup silken tofu
- 1/4 cup nutritional yeast
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix gluten-free flour, olive oil, and cold water to form a dough.
- Press the dough into a pie pan to form the crust.
- In a blender, combine silken tofu, nutritional yeast, turmeric, garlic powder, salt, and pepper. Blend until smooth.
- Stir in spinach, bell pepper, and onion into the tofu mixture.
- Pour the filling into the crust.
- Bake for 30-35 minutes until set.
- Let it cool before slicing and serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- You can add other vegetables as desired.
- Serve warm or cold.
