- 1 cup vegan mayonnaise
- 1 tablespoon mustard
- 1/2 cup celery, chopped
- 1/2 cup red onion, chopped
- 1/4 cup dill pickles, chopped

Instructions
- Boil the potatoes until tender, about 10-15 minutes.
- Drain and let cool.
- In a large bowl, combine vegan mayonnaise and mustard.
- Add cooled potatoes, celery, red onion, and dill pickles.
- Mix gently until well combined.
- Season with salt and pepper.
- Chill in the refrigerator for at least 30 minutes before serving.
