Description

A creamy vegan mushroom stroganoff that’s gluten-free and full of flavor.


Ingredients

  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup coconut cream
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon nutritional yeast
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and garlic. Sauté until translucent.
  3. Add mushrooms and cook until golden brown.
  4. Stir in vegetable broth, soy sauce, and nutritional yeast.
  5. Simmer for 5 minutes.
  6. Add coconut cream and paprika. Stir well.
  7. Cook until the sauce thickens. Season with salt and pepper.
  8. Serve over gluten-free pasta or rice.
