A creamy vegan mushroom stroganoff that’s gluten-free and full of flavor.
Ingredients

- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup coconut cream
- 2 tablespoons soy sauce or tamari
- 1 tablespoon nutritional yeast
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and garlic. Sauté until translucent.
- Add mushrooms and cook until golden brown.
- Stir in vegetable broth, soy sauce, and nutritional yeast.
- Simmer for 5 minutes.
- Add coconut cream and paprika. Stir well.
- Cook until the sauce thickens. Season with salt and pepper.
- Serve over gluten-free pasta or rice.

- Use any mushrooms you prefer.
- Adjust seasoning to your taste.
