Description

A delicious vegan twist on traditional lasagna. These roll-ups are filled with a flavorful mixture of vegetables and tofu.


Ingredients

  • 9 lasagna noodles
  • 1 cup tofu, crumbled
  • 1 cup spinach, chopped
  • 1 cup marinara sauce
  • 1/2 cup nutritional yeast
  • 1 zucchini, grated
  • 1 bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions. Drain and set aside.
  3. In a bowl, mix tofu, spinach, nutritional yeast, zucchini, bell pepper, garlic powder, onion powder, salt, and pepper.
  4. Spread a thin layer of marinara sauce on each noodle.
  5. Place a spoonful of the tofu mixture on one end of each noodle and roll it up.
  6. Place the rolled noodles in a baking dish. Pour remaining marinara sauce on top.
  7. Bake for 25-30 minutes.
  8. Let cool for a few minutes before serving.
