A delicious vegan twist on traditional lasagna. These roll-ups are filled with a flavorful mixture of vegetables and tofu.
Ingredients

- 9 lasagna noodles
- 1 cup tofu, crumbled
- 1 cup spinach, chopped
- 1 cup marinara sauce
- 1/2 cup nutritional yeast
- 1 zucchini, grated
- 1 bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a bowl, mix tofu, spinach, nutritional yeast, zucchini, bell pepper, garlic powder, onion powder, salt, and pepper.
- Spread a thin layer of marinara sauce on each noodle.
- Place a spoonful of the tofu mixture on one end of each noodle and roll it up.
- Place the rolled noodles in a baking dish. Pour remaining marinara sauce on top.
- Bake for 25-30 minutes.
- Let cool for a few minutes before serving.
Notes
- Use gluten-free noodles for a gluten-free option.
- Add your favorite vegetables to the filling.
- Top with fresh basil before serving for extra flavor.
