This is an easy vegan key lime pie that is also gluten-free. Perfect for a refreshing dessert.

- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- 1 can coconut milk
- 1/2 cup key lime juice
- 1/4 cup agave syrup
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, melted coconut oil, and maple syrup.
- Press the mixture into a pie dish to form the crust.
- Bake the crust for 10 minutes, then allow it to cool.
- In a blender, combine coconut milk, key lime juice, agave syrup, vanilla extract, and cornstarch.
- Blend until smooth and creamy.
- Pour the filling into the cooled crust.
- Bake for 25 minutes until set.
- Let the pie cool, then refrigerate for at least 2 hours before serving.
Notes
- Serve with vegan whipped cream if desired.
- Store leftovers in the refrigerator.
