Description

This is an easy vegan key lime pie that is also gluten-free. Perfect for a refreshing dessert.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 can coconut milk
  • 1/2 cup key lime juice
  • 1/4 cup agave syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, melted coconut oil, and maple syrup.
  3. Press the mixture into a pie dish to form the crust.
  4. Bake the crust for 10 minutes, then allow it to cool.
  5. In a blender, combine coconut milk, key lime juice, agave syrup, vanilla extract, and cornstarch.
  6. Blend until smooth and creamy.
  7. Pour the filling into the cooled crust.
  8. Bake for 25 minutes until set.
  9. Let the pie cool, then refrigerate for at least 2 hours before serving.
