Ingredients

  • 4 cups green cabbage, shredded
  • 1 cup purple cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup vegan mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon mustard
  • 1 tablespoon erythritol (or preferred sweetener)
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large bowl, combine green cabbage, purple cabbage, and carrots.
  2. In a separate bowl, whisk together vegan mayonnaise, apple cider vinegar, mustard, erythritol, salt, and pepper.
  3. Pour the dressing over the cabbage mixture.
  4. Toss until the vegetables are well coated with the dressing.
  5. Refrigerate for at least 30 minutes before serving.
