A refreshing and low-carb vegan coleslaw that’s perfect for any meal.
Ingredients

- 4 cups green cabbage, shredded
- 1 cup purple cabbage, shredded
- 1 cup carrots, shredded
- 1/2 cup vegan mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon mustard
- 1 tablespoon erythritol (or preferred sweetener)
- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, combine green cabbage, purple cabbage, and carrots.
- In a separate bowl, whisk together vegan mayonnaise, apple cider vinegar, mustard, erythritol, salt, and pepper.
- Pour the dressing over the cabbage mixture.
- Toss until the vegetables are well coated with the dressing.
- Refrigerate for at least 30 minutes before serving.

- Adjust seasoning to your taste.
- Try adding other low-carb vegetables if desired.
