A hearty and flavorful vegan gumbo that is gluten free.
Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup okra, sliced
- 1 can (15 oz) black beans, drained and rinsed
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- 2 green onions, sliced for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, celery, and bell pepper; sauté until softened.
- Stir in garlic and cook for an additional minute.
- Add diced tomatoes and vegetable broth; bring to a boil.
- Stir in okra, black beans, and Cajun seasoning.
- Reduce heat and simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
