Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, celery, and bell pepper; sauté until softened.
  3. Stir in garlic and cook for an additional minute.
  4. Add diced tomatoes and vegetable broth; bring to a boil.
  5. Stir in okra, black beans, and Cajun seasoning.
  6. Reduce heat and simmer for 30 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with green onions.
