A delicious vegan twist on the classic green bean casserole.

- 4 cups fresh green beans, trimmed
- 1 cup mushrooms, sliced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 can coconut milk (13.5 oz)
- 1/4 cup nutritional yeast
- 1 tablespoon soy sauce
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1 cup crispy fried onions
Instructions
- Preheat your oven to 350°F (175°C).
- Blanch the green beans in boiling water for 3-4 minutes, then drain and set aside.
- In a skillet, sauté onions and garlic until soft.
- Add mushrooms and cook until tender.
- Stir in coconut milk, nutritional yeast, soy sauce, thyme, and pepper. Cook until heated through.
- Combine green beans with the mushroom mixture.
- Transfer to a baking dish and top with crispy fried onions.
- Bake for 20-25 minutes until bubbly.
Notes
- For added crunch, use homemade fried onions.
- Feel free to add other vegetables like carrots or peas.
