Description

A delicious vegan twist on the classic green bean casserole.


Ingredients

  • 4 cups fresh green beans, trimmed
  • 1 cup mushrooms, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can coconut milk (13.5 oz)
  • 1/4 cup nutritional yeast
  • 1 tablespoon soy sauce
  • 1 teaspoon thyme
  • 1/2 teaspoon black pepper
  • 1 cup crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blanch the green beans in boiling water for 3-4 minutes, then drain and set aside.
  3. In a skillet, sauté onions and garlic until soft.
  4. Add mushrooms and cook until tender.
  5. Stir in coconut milk, nutritional yeast, soy sauce, thyme, and pepper. Cook until heated through.
  6. Combine green beans with the mushroom mixture.
  7. Transfer to a baking dish and top with crispy fried onions.
  8. Bake for 20-25 minutes until bubbly.

Notes

  • For added crunch, use homemade fried onions.
  • Feel free to add other vegetables like carrots or peas.
