A delicious vegan frittata made with chickpea flour and vegetables.
Ingredients

- 1 cup chickpea flour
- 1 cup water
- 1/2 teaspoon turmeric
- 1/2 teaspoon baking powder
- 1 cup spinach, chopped
- 1/2 cup bell pepper, diced
- 1/4 cup onion, diced
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix chickpea flour, water, turmeric, baking powder, salt, and pepper until smooth.
- Add chopped spinach, bell pepper, and onion to the mixture.
- Pour the mixture into a greased oven-safe skillet.
- Bake for 25-30 minutes or until set and golden on top.
- Allow to cool slightly before slicing and serving.
