A dairy-free alternative to traditional cottage cheese, made from plant-based ingredients.
Ingredients
Scale
- 2 cups of cashews, soaked
- 1/2 cup of water
- 2 tablespoons of lemon juice
- 1 teaspoon of apple cider vinegar
- 1/2 teaspoon of salt
- 1 tablespoon of nutritional yeast (optional)
Instructions
- Drain and rinse the soaked cashews.
- Blend cashews with water, lemon juice, apple cider vinegar, and salt until smooth.
- If using, add nutritional yeast and blend again.
- Transfer to a bowl and refrigerate for at least 1 hour.
- Stir well before serving.
Notes
- Adjust seasoning to taste.
- Can be used in salads, spreads, or as a topping.
- Store in an airtight container in the fridge for up to 5 days.
