- 1 can of chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt to taste
- 8 corn tortillas
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix chickpeas, olive oil, cumin, paprika, garlic powder, and salt.
- Spread the chickpea mixture on a baking sheet.
- Bake for 20 minutes until crispy.
- Warm the corn tortillas in a skillet for 1-2 minutes.
- Assemble tacos with chickpeas, avocado, lettuce, tomatoes, and cilantro.
- Serve with lime wedges.
