Ingredients

- 1 cup black beans, cooked
- 1 cup bell peppers, diced
- 1 cup spinach, chopped
- 1 avocado, sliced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 large whole wheat tortillas
- Salt and pepper to taste
Instructions
- In a skillet, sauté bell peppers until soft.
- Add spinach and cook until wilted.
- Stir in black beans, cumin, chili powder, salt, and pepper.
- Warm the tortillas in a separate pan.
- Layer the bean mixture and avocado on each tortilla.
- Wrap the tortillas tightly to form burritos.
- Serve immediately.
Notes
- Feel free to add other vegetables.
- Can be served with salsa or hot sauce.
- Store leftovers in the refrigerator for up to three days.
