Description
A simple and healthy vegan asparagus soup.
Ingredients

- 1 bunch of asparagus, trimmed and cut into pieces
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add asparagus pieces and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Puree the soup until smooth using a blender.
- Season with salt and pepper.
- Serve warm.

- Use fresh asparagus for best flavor.
- Try adding lemon juice for a zesty taste.
- Garnish with herbs if desired.
