Description

Teriyaki Pineapple Chicken Stuffed Peppers are a colorful and delicious dish that combines savory teriyaki chicken with sweet pineapple, all nestled in vibrant bell peppers.


Ingredients

  • 4 large bell peppers
  • 2 cups cooked chicken
  • 1 cup cooked rice
  • 1 cup teriyaki sauce
  • 1 cup pineapple chunks
  • 1/4 cup green onions
  • 1 cup shredded cheese
  • 2 tablespoons sesame seeds
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Brush the outside of each pepper with olive oil and place them upright in a baking dish.
  4. Cook the chicken if not using leftovers, then shred or dice it.
  5. In a mixing bowl, combine the chicken, rice, teriyaki sauce, pineapple, and green onions. Season with salt and pepper.
  6. Spoon the mixture into each pepper, packing it tightly, and top with shredded cheese.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  9. Let cool slightly before serving.
