- 2 cups sweet potatoes, peeled and diced
- 4 large eggs
- 1 cup milk
- 1/2 cup shredded cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat.
- Add diced sweet potatoes and sauté for about 10 minutes until soft.
- In a bowl, whisk together eggs, milk, salt, pepper, and paprika.
- Grease a baking dish and layer the sautéed sweet potatoes.
- Pour the egg mixture over the sweet potatoes.
- Sprinkle cheese on top.
- Bake for 25-30 minutes until eggs are set.
