Description

Ingredients

  • 2 cups sweet potatoes, peeled and diced
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup shredded cheese

  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add diced sweet potatoes and sauté for about 10 minutes until soft.
  4. In a bowl, whisk together eggs, milk, salt, pepper, and paprika.
  5. Grease a baking dish and layer the sautéed sweet potatoes.
  6. Pour the egg mixture over the sweet potatoes.
