Ingredients

  • 1 large sweet onion
  • 1/4 cup red vinegar
  • 1/4 cup white vinegar
  • 2 tablespoons sesame oil
  • Fresh spices (such as minced garlic, ginger, or herbs) as desired
  • 1 tablespoon cornstarch
  • 1/2 cup sugar

Instructions

  1. Grate the sweet onion over a bowl to catch juices.
  2. Warm red vinegar and white vinegar in a small saucepan over low heat.
  3. Add grated onion and sugar to the warmed vinegars, stirring to combine.
  4. Cook over low heat, stirring frequently, until sauce thickens, then add cornstarch slurry and cook for another 5 minutes.
  5. Remove from heat and let cool completely before storing.

Notes

For a different taste, substitute red vinegar with apple cider vinegar, and white vinegar with rice vinegar. You can use honey or agave syrup instead of sugar for a different level of sweetness. Ensure to grate the onion finely for the best results.
