- 4 large russet potatoes
- 1 cup cooked black beans
- 1/2 cup corn
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt to taste
- Olive oil for brushing
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes. Prick them with a fork.
- Bake the potatoes for 45 minutes or until tender.
- Let the potatoes cool slightly, then slice them in half lengthwise.
- Scoop out some flesh to create space for the filling.
- In a bowl, mix black beans, corn, tomatoes, green onions, cumin, smoked paprika, and salt.
- Fill each potato skin with the mixture.
- Brush the skins with olive oil and place them back in the oven.
- Bake for an additional 15 minutes until crispy.
- Serve warm and enjoy.
