Ingredients

  • 4 large russet potatoes
  • 1 cup cooked black beans
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Prick them with a fork.
  3. Bake the potatoes for 45 minutes or until tender.
  4. Let the potatoes cool slightly, then slice them in half lengthwise.
  5. Scoop out some flesh to create space for the filling.
  6. In a bowl, mix black beans, corn, tomatoes, green onions, cumin, smoked paprika, and salt.
  7. Fill each potato skin with the mixture.
