- 2 Tablespoons Extra Virgin Olive Oil or Avocado Oil
- 1 Medium Onion, diced
- 2–3 Garlic Cloves, minced
- 1 pound Lean Ground Beef
- 1 ½ Cups Cooked Brown Rice
- 14.5 ounces Diced Tomatoes (1 can)
- 1 Tablespoon Tomato Paste
- 1 Teaspoon Dried Oregano
- 1 Tablespoon Smoked Paprika
- Kosher Salt and Pepper to taste
- 7 Large Bell Peppers (tops and cores removed)
- 1 Cup Shredded Cheddar Jack Cheese
- Freshly chopped parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Place the halved bell peppers cut side up in a baking dish.
- In a large pan, heat oil over medium heat. Add diced onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for 1 additional minute.
- Add ground beef and cook until no longer pink, about 5-6 minutes, stirring occasionally.
- Stir in brown rice, diced tomatoes, tomato paste, dried oregano, and smoked paprika. Cook for 4-5 minutes, seasoning with salt and pepper.
- Stuff each bell pepper with the beef mixture. Bake in the preheated oven for 10-12 minutes until the peppers are mostly tender.
- Remove from the oven, sprinkle with cheese, and bake for another 5-7 minutes until cheese is bubbly and golden. Garnish with parsley before serving.
Notes
For variations, consider using ground turkey or chicken, or for a vegetarian option, use black beans or lentils. Freeze stuffing before baking for later use.
