Description

Hearty bell peppers filled with ground beef, tomatoes, spices, and topped with melted cheese, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil or Avocado Oil
  • 1 Medium Onion, diced
  • 23 Garlic Cloves, minced
  • 1 pound Lean Ground Beef
  • 1 ½ Cups Cooked Brown Rice
  • 14.5 ounces Diced Tomatoes (1 can)
  • 1 Tablespoon Tomato Paste
  • 1 Teaspoon Dried Oregano
  • 1 Tablespoon Smoked Paprika
  • Kosher Salt and Pepper to taste
  • 7 Large Bell Peppers (tops and cores removed)
  • 1 Cup Shredded Cheddar Jack Cheese
  • Freshly chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Place the halved bell peppers cut side up in a baking dish.
  2. In a large pan, heat oil over medium heat. Add diced onion and sauté for 3-4 minutes until softened. Stir in minced garlic and cook for 1 additional minute.
  3. Add ground beef and cook until no longer pink, about 5-6 minutes, stirring occasionally.
  4. Stir in brown rice, diced tomatoes, tomato paste, dried oregano, and smoked paprika. Cook for 4-5 minutes, seasoning with salt and pepper.
  5. Stuff each bell pepper with the beef mixture. Bake in the preheated oven for 10-12 minutes until the peppers are mostly tender.
  6. Remove from the oven, sprinkle with cheese, and bake for another 5-7 minutes until cheese is bubbly and golden. Garnish with parsley before serving.

Notes

For variations, consider using ground turkey or chicken, or for a vegetarian option, use black beans or lentils. Freeze stuffing before baking for later use.
