Description

A delightful dessert combining sweet strawberries and juicy peaches with a crunchy oat topping, perfect for any occasion.


Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 2/3 cup all-purpose flour
  • 1/3 cup salted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 2 1/2 cups peaches, peeled and sliced
  • 1 cup strawberries, sliced
  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium-sized bowl, combine the old-fashioned oats, brown sugar, all-purpose flour, and ground cinnamon. Pour the melted butter into the dry mixture and stir until crumbly.
  2. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan lightly. Spread half of the crumbly oat mixture in the bottom of the pan.
  3. Layer the sliced peaches evenly over the oat mixture, followed by the sliced strawberries.
  4. In a saucepan, combine the brown sugar, cornstarch, salt, and water. Stir until thickened, about 3-5 minutes, then remove from heat and stir in the vanilla extract. Pour over the fruit.
  5. Sprinkle the remaining crumbly topping over the fruit and syrup layer.
  6. Bake for about 35 minutes until the topping is golden brown and the fruit is bubbling. Broil for an additional 2-3 minutes for a crunchier topping if desired.

Notes

Serve warm with vanilla ice cream or whipped cream. Can be made ahead of time and stored in the refrigerator.
