- 1/2 cup old fashioned oats
- 1/2 cup brown sugar
- 2/3 cup all-purpose flour
- 1/3 cup salted butter, melted
- 1/2 teaspoon ground cinnamon
- 2 1/2 cups peaches, peeled and sliced
- 1 cup strawberries, sliced
- 1/4 cup brown sugar
- 3 teaspoons cornstarch
- 1/3 cup water
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions
- In a medium-sized bowl, combine the old-fashioned oats, brown sugar, all-purpose flour, and ground cinnamon. Pour the melted butter into the dry mixture and stir until crumbly.
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan lightly. Spread half of the crumbly oat mixture in the bottom of the pan.
- Layer the sliced peaches evenly over the oat mixture, followed by the sliced strawberries.
- In a saucepan, combine the brown sugar, cornstarch, salt, and water. Stir until thickened, about 3-5 minutes, then remove from heat and stir in the vanilla extract. Pour over the fruit.
- Sprinkle the remaining crumbly topping over the fruit and syrup layer.
- Bake for about 35 minutes until the topping is golden brown and the fruit is bubbling. Broil for an additional 2-3 minutes for a crunchier topping if desired.
Notes
Serve warm with vanilla ice cream or whipped cream. Can be made ahead of time and stored in the refrigerator.
