Description

A fruity and colorful cake featuring layers of vanilla sponge, cream cheese filling, and topped with fresh strawberries and mangoes, perfect for summer.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup heavy cream, whipped to soft peaks
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 1/2 cups fresh mangoes, peeled and diced
  • 1 tablespoon granulated sugar (optional)
  • Fresh strawberry halves for garnish
  • Mango slices for garnish
  • Mint leaves, optional for garnish
  • Whipped cream for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine the flour, baking powder, and salt. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then, add vanilla and mix until incorporated.
  4. Gradually add the dry ingredients to the butter mixture, alternating with whole milk, mixing until just combined.
  5. Pour the batter evenly into the prepared pans and bake for 20-25 minutes or until a toothpick comes out clean. Cool in the pans for 10 minutes, then turn out onto wire racks.
  6. For the cream filling, beat the cream cheese and remaining butter until smooth. Gradually add powdered sugar and mix, then add vanilla and fold in whipped cream.
  7. Prepare fruit layers by hulling and slicing strawberries and dicing mangoes. Optionally toss them with granulated sugar if they are tart.
  8. Assemble the cake: Place the first layer on a serving plate and spread cream filling on top, then layer with half the fruit. Place the second layer on top, add more filling and top with remaining fruit and garnish.
  9. Serve chilled, optionally with whipped cream or ice cream on the side.

Notes

Ensure all ingredients are at room temperature for better mixing. For variations, try adding different fruits or flavorings.
