Delicious strawberry crumb bars that are vegan and gluten-free.
Ingredients

- 2 cups gluten-free oats
- 1 cup almond flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 cups fresh strawberries, diced
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix oats, almond flour, maple syrup, melted coconut oil, and salt.
- Press half of the mixture into a greased baking dish.
- In another bowl, combine strawberries, cornstarch, lemon juice, and vanilla extract.
- Spread the strawberry mixture over the crust.
- Top with remaining oat mixture.
- Bake for 30-35 minutes until golden brown.
- Let cool before cutting into bars.
Notes
- Store leftovers in an airtight container.
- Can substitute other fruits for strawberries.
- Adjust sweetness based on preference.
