Ingredients

  • 2 cups gluten-free oats
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 cups fresh strawberries, diced
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix oats, almond flour, maple syrup, melted coconut oil, and salt.
  3. Press half of the mixture into a greased baking dish.
  4. In another bowl, combine strawberries, cornstarch, lemon juice, and vanilla extract.
  5. Spread the strawberry mixture over the crust.
  6. Top with remaining oat mixture.
  7. Bake for 30-35 minutes until golden brown.
  8. Let cool before cutting into bars.
