- 2 tablespoons extra virgin olive oil
- 6 garlic cloves, minced
- 1 pound Cremini mushrooms, cleaned and sliced
- 2 1/4 cups half and half or single cream
- 1 pound pasta (any type you prefer)
- 8 oz spinach (fresh or frozen)
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons flat leaf parsley, chopped
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil, add salt, and cook pasta according to package instructions until almost al dente.
- Heat olive oil in a large skillet over medium heat, add garlic, and sauté for 1-2 minutes until fragrant and golden.
- Add sliced mushrooms, season with salt and pepper, and cook for 5-7 minutes until golden brown.
- Add spinach to the skillet and cook until wilted (about 2-3 minutes for fresh, or until warmed through for frozen).
- Stir in half and half, bring to a boil, then reduce heat and simmer for 3-5 minutes until sauce thickens.
- Drain pasta, reserving 1 cup of pasta water, and mix with the sauce, adding Parmesan cheese and parsley, and adjust with reserved water if needed.
- Season to taste and serve immediately, garnished with extra parsley or Parmesan if desired.
Notes
Consider substituting half and half with heavy cream for a richer sauce or using nutritional yeast for a vegan alternative.
