Description

A delightful pasta dish combining earthy mushrooms and vibrant spinach in a creamy sauce, perfect for a quick weeknight dinner or casual gatherings.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 6 garlic cloves, minced
  • 1 pound Cremini mushrooms, cleaned and sliced
  • 2 1/4 cups half and half or single cream
  • 1 pound pasta (any type you prefer)
  • 8 oz spinach (fresh or frozen)
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons flat leaf parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil, add salt, and cook pasta according to package instructions until almost al dente.
  2. Heat olive oil in a large skillet over medium heat, add garlic, and sauté for 1-2 minutes until fragrant and golden.
  3. Add sliced mushrooms, season with salt and pepper, and cook for 5-7 minutes until golden brown.
  4. Add spinach to the skillet and cook until wilted (about 2-3 minutes for fresh, or until warmed through for frozen).
  5. Stir in half and half, bring to a boil, then reduce heat and simmer for 3-5 minutes until sauce thickens.
  6. Drain pasta, reserving 1 cup of pasta water, and mix with the sauce, adding Parmesan cheese and parsley, and adjust with reserved water if needed.
  7. Season to taste and serve immediately, garnished with extra parsley or Parmesan if desired.

Notes

Consider substituting half and half with heavy cream for a richer sauce or using nutritional yeast for a vegan alternative.
