Ingredients

  • 8 eggs
  • 2 cups milk
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups shredded cheese
  • 1 can black beans, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • 1 package tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs and milk.
  3. Add bell peppers, onions, cheese, black beans, cumin, chili powder, salt, and pepper.
  4. Crush tortilla chips and layer them in a baking dish.
  5. Pour the egg mixture over the tortilla chips.
  6. Bake for 30-35 minutes or until eggs are set.
  7. Let cool before serving.

Notes

  • Feel free to add cooked sausage or bacon for extra protein.
  • Can be made ahead and stored in the fridge overnight.
