  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (such as cremini or button mushrooms)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • 1 teaspoon Dijon mustard
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until golden brown. Remove and keep warm.
  3. In the same skillet, reduce heat to medium, add butter, and sauté the onion for 3-4 minutes until softened. Add garlic and mushrooms, cooking for an additional 5-7 minutes.
  4. Pour in chicken broth, scraping the bottom of the skillet to deglaze. Simmer for 2-3 minutes, then stir in heavy cream, thyme, and Dijon mustard. Simmer for another 5-7 minutes until thickened.
  5. Return the pork chops to the skillet, spooning sauce over them, and heat through for 2-3 minutes.
  6. Serve the pork chops with additional sauce and garnish with fresh parsley.
