- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced (such as cremini or button mushrooms)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
- 1 teaspoon Dijon mustard
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the pork chops dry with paper towels and season both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until golden brown. Remove and keep warm.
- In the same skillet, reduce heat to medium, add butter, and sauté the onion for 3-4 minutes until softened. Add garlic and mushrooms, cooking for an additional 5-7 minutes.
- Pour in chicken broth, scraping the bottom of the skillet to deglaze. Simmer for 2-3 minutes, then stir in heavy cream, thyme, and Dijon mustard. Simmer for another 5-7 minutes until thickened.
- Return the pork chops to the skillet, spooning sauce over them, and heat through for 2-3 minutes.
- Serve the pork chops with additional sauce and garnish with fresh parsley.
