Description

A hearty slow cooker chili made with sweet potatoes and black beans.


Ingredients

  • 2 medium sweet potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Place sweet potatoes, black beans, tomatoes, onion, garlic, and bell pepper in the slow cooker.
  2. Add vegetable broth, chili powder, cumin, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Stir before serving and adjust seasoning if needed.
