A delightful comfort food recipe combining tender beef bites with creamy garlic butter and baby potatoes, all cooked to perfection in a slow cooker.

- 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 2 tbsp olive oil for searing (optional)
- 1.5 lbs baby potatoes or Yukon Gold potatoes, halved or quartered if large
- 1 tbsp olive oil
- 4 tbsp unsalted butter, melted
- 6 cloves garlic, minced
- 1 tsp dried thyme or 1 tbsp fresh thyme
- 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
- 1/2 cup beef broth
- 1 tbsp Worcestershire sauce
- 2 tbsp fresh parsley, chopped (optional)
- Grated Parmesan cheese (optional)
Instructions
- Pat the beef bites dry with paper towels and season evenly with salt, black pepper, garlic powder, and smoked paprika. If searing, heat olive oil in a skillet and sear beef until browned on all sides, about 2-3 minutes per side.
- Wash the baby potatoes thoroughly. Halve or quarter if large, and toss with olive oil, salt, and black pepper in a large bowl.
- In a medium bowl, whisk together melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce.
- In the slow cooker, place seasoned potatoes at the bottom, followed by the seared beef, and pour the garlic butter sauce over everything. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- After cooking, remove the lid, mix gently, and serve warm, optionally garnished with parsley and Parmesan cheese.
Notes
For a lighter version, use olive oil instead of butter and consider chicken as a substitute for beef.
