Description

A delightful comfort food recipe combining tender beef bites with creamy garlic butter and baby potatoes, all cooked to perfection in a slow cooker.


Ingredients

  • 2 lbs beef chuck roast or sirloin, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil for searing (optional)
  • 1.5 lbs baby potatoes or Yukon Gold potatoes, halved or quartered if large
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1 tsp dried rosemary or 1 tbsp fresh rosemary, chopped
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Pat the beef bites dry with paper towels and season evenly with salt, black pepper, garlic powder, and smoked paprika. If searing, heat olive oil in a skillet and sear beef until browned on all sides, about 2-3 minutes per side.
  2. Wash the baby potatoes thoroughly. Halve or quarter if large, and toss with olive oil, salt, and black pepper in a large bowl.
  3. In a medium bowl, whisk together melted butter, minced garlic, thyme, rosemary, beef broth, and Worcestershire sauce.
  4. In the slow cooker, place seasoned potatoes at the bottom, followed by the seared beef, and pour the garlic butter sauce over everything. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. After cooking, remove the lid, mix gently, and serve warm, optionally garnished with parsley and Parmesan cheese.

Notes

For a lighter version, use olive oil instead of butter and consider chicken as a substitute for beef.
