Description

Delicious shrimp tacos topped with refreshing mango salsa, perfect for warm days and gatherings.


Ingredients

  • 2 teaspoons olive oil
  • 1 1/4 pounds shrimp, peeled, deveined, and tails removed
  • Chili powder to taste
  • Salt to taste
  • 1 cup mango, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/2 jalapeno pepper, minced
  • Juice of 1 lime
  • 1/2 cup cilantro leaves, finely chopped
  • 1 cup sour cream (light can be used)
  • 1/2 cup cilantro leaves, roughly chopped
  • 2 teaspoons lime juice
  • 1 1/2 teaspoons honey
  • 1/4 cup prepared green salsa
  • Salt and pepper to taste
  • 1 cup shredded purple cabbage
  • 8 corn or flour tortillas

Instructions

  1. Heat olive oil in a large pan over high heat. Season shrimp with chili powder and salt. Cook shrimp for 2-3 minutes on one side until pink, then flip and cook for another 2-3 minutes.
  2. In a medium bowl, combine mango, red bell pepper, jalapeño, lime juice, and chopped cilantro. Season with salt and refrigerate for at least 15 minutes.
  3. In a food processor, blend sour cream, chopped cilantro, lime juice, honey, and green salsa until smooth. Adjust seasoning with salt and pepper.
  4. Warm tortillas in a skillet or microwave, then assemble tacos by spreading the creamy sauce, adding shredded cabbage, seared shrimp, and topping with mango salsa. Serve immediately.

Notes

For best results, serve immediately after preparation. Store leftovers separately for freshness.
