- 1 lb large shrimp, peeled and deveined
- 1 cup fresh or frozen corn kernels
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 2 celery stalks, finely chopped
- 1 bell pepper, finely chopped
- 4 cloves garlic, minced
- 3 cups low sodium chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 2 tablespoons flour
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped for garnish
- 1 tablespoon lemon juice (optional)
Instructions
- Prepare the ingredients by chopping the onion, celery, bell pepper, and mincing the garlic. Peel and devein the shrimp, chopping if needed.
- Melt butter in a large pot over medium heat. Add the onion, celery, and bell pepper. Cook until soft, about 5 minutes.
- Add minced garlic, Cajun seasoning, smoked paprika, thyme, and oregano. Cook for another minute.
- Sprinkle flour over the vegetables and stir to combine. Cook for 2 minutes, then gradually add chicken broth while stirring.
- Mix in whole milk and bring to a simmer. Let thicken for 5-7 minutes.
- Add shrimp and corn, simmer for 5-7 minutes until shrimp are pink and corn is tender.
- Stir in heavy cream and simmer for an additional 5 minutes. Season with salt and pepper, and add lemon juice if desired.
Notes
For a gluten-free version, substitute regular flour with a gluten-free blend. Use dairy alternatives for a vegan adaptation.
