  • 1 lb large shrimp, peeled and deveined
  • 1 cup fresh or frozen corn kernels
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 bell pepper, finely chopped
  • 4 cloves garlic, minced
  • 3 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tablespoons flour
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the ingredients by chopping the onion, celery, bell pepper, and mincing the garlic. Peel and devein the shrimp, chopping if needed.
  2. Melt butter in a large pot over medium heat. Add the onion, celery, and bell pepper. Cook until soft, about 5 minutes.
  3. Add minced garlic, Cajun seasoning, smoked paprika, thyme, and oregano. Cook for another minute.
  4. Sprinkle flour over the vegetables and stir to combine. Cook for 2 minutes, then gradually add chicken broth while stirring.
  5. Mix in whole milk and bring to a simmer. Let thicken for 5-7 minutes.
  6. Add shrimp and corn, simmer for 5-7 minutes until shrimp are pink and corn is tender.
  7. Stir in heavy cream and simmer for an additional 5 minutes. Season with salt and pepper, and add lemon juice if desired.

Notes

For a gluten-free version, substitute regular flour with a gluten-free blend. Use dairy alternatives for a vegan adaptation.
