Description

A comforting and hearty soup combining andouille sausage, creamy potatoes, and a medley of vegetables, perfect for chilly evenings.

  • 1 tablespoon vegetable oil
  • 1 ring (or 13 ounces) andouille sausage, sliced into 1⁄4-inch rounds
  • 1 large onion, diced (about 1 cup)
  • 1/2 cup diced celery (about 1 rib)
  • 1/2 red bell pepper, seeded and diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded
  • Chopped parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat and brown the andouille sausage for 3-4 minutes. Remove and set aside.
  2. Add onions, celery, and red bell pepper to the pot; sauté for 5-8 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Sprinkle in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne. Pour in chicken broth and add cubed potatoes. Simmer for 20-25 minutes until potatoes are tender.
  4. Return sausage to the pot, pour in heavy cream, and add shredded cheddar cheese. Stir gently and simmer for an additional 5 minutes. Garnish with chopped parsley before serving.

Notes

This soup is ideal for gatherings and can be adjusted for dietary preferences. Substitute for a plant-based sausage or vegetable broth as needed.
