- 4 chicken thighs
- 1 head of garlic
- 2 cups of mixed vegetables (carrots, bell peppers, broccoli)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the outer layers of the garlic head, leaving the cloves intact.
- Place the chicken thighs in a baking dish.
- Add the mixed vegetables around the chicken.
- Drizzle olive oil over the chicken and vegetables.
- Sprinkle salt, pepper, and thyme on top.
- Place the garlic head in the baking dish.
- Bake for 35-40 minutes until the chicken is cooked through.
- Let it rest for 5 minutes before serving.
