Ingredients

- 2 medium beets
- 4 oz goat cheese
- 4 cups mixed greens
- 1/4 cup walnuts
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar

Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for 45 minutes.
- Let the beets cool, then peel and slice them.
- In a large bowl, combine mixed greens, sliced beets, and walnuts.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
- Top with crumbled goat cheese before serving.
