Instructions
- Prepare the crust by mixing flour, sugar, butter, and salt until crumbly, then press into an 8×8-inch baking pan.
- Bake the crust until lightly golden.
- Blend raspberries and cornstarch until smooth for the filling.
- In a separate bowl, whisk together sugar, eggs, lemon juice, and zest, then add the raspberry mixture.
- Pour the filling over the baked crust and spread evenly.
- Bake for an additional 20-25 minutes until the filling is set.
- Cool at room temperature, then refrigerate for at least 2 hours before serving.
- Dust with powdered sugar and cut into squares to serve.
