Description

A simple and nutritious quinoa pilaf recipe that is easy to prepare.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup peas, fresh or frozen
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add bell pepper and sauté for another 2 minutes.
  5. Stir in quinoa, vegetable broth, salt, and pepper.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 15 minutes.
  8. Remove from heat and let sit for 5 minutes.
  9. Fluff with a fork and stir in peas.
