A simple and nutritious quinoa pilaf recipe that is easy to prepare.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup peas, fresh or frozen
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add bell pepper and sauté for another 2 minutes.
- Stir in quinoa, vegetable broth, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes.
- Fluff with a fork and stir in peas.
Notes
- Use vegetable broth for more flavor.
- Feel free to add other vegetables.
- This dish can be served warm or cold.
