Ingredients

- 1 cup all-purpose flour
- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine pumpkin puree, sugar, vegetable oil, and eggs.
- Gradually add the dry ingredients to the wet ingredients. Mix until combined.
- Line a cupcake tray with liners and fill each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container.
- Frost with cream cheese icing for extra flavor.
- Sprinkle with pumpkin seeds for decoration.
