Delightful dessert bars combining creamy cream cheese with crunchy pecans on a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping, thawed
- 1 cup packed brown sugar
- 1/2 cup light corn syrup
- 1/4 cup unsalted butter
- 2 large eggs, lightly beaten
- 1 1/2 cups chopped pecans
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine graham cracker crumbs and sugar in a bowl, mix with melted butter, and press into a greased 9×13-inch dish. Chill for 10-15 minutes.
- In a bowl, beat cream cheese until smooth. Gradually mix in powdered sugar and vanilla, then fold in whipped topping. Spread over the crust.
- In a saucepan, combine brown sugar, corn syrup, and butter. Heat until bubbling. Remove from heat, whisk in eggs, then stir in pecans, vanilla, and salt. Cool slightly and pour over cream cheese layer.
- Cover with plastic wrap and chill for at least 4 hours or overnight. Slice with a warm knife before serving.
Notes
For a dairy-free version, substitute coconut oil for butter and use dairy-free cream cheese.
