- 5–6 medium peaches
- 4–5 small jalapenos, seeded and chopped
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 3 cups granulated sugar
Instructions
- Prepare the peaches by peeling and pitting them; blanch for easy peeling, then chop finely.
- Wash jalapenos, cut off tops, slice open, remove seeds, and finely chop.
- In a large saucepan, combine chopped peaches, jalapenos, lemon zest, and lemon juice.
- Heat over medium-high, bring to a gentle boil, and stir in sugar until dissolved; cook for 15-20 minutes until thickened.
- Test for doneness by dipping a spoon; if it coats, your jam is ready.
- Prepare jars by washing with hot soapy water; transfer jam into jars, leaving 1/4 inch space.
- Seal jars and allow to cool; store in refrigerator or freezer for longer shelf life.
Notes
You can customize the heat level by adjusting jalapenos used. Consider pairing the jam with cheese or as a topping for grilled meats.
