Description

Ingredients

  • 45 small jalapenos, seeded and chopped
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 3 cups granulated sugar

Instructions

  1. Prepare the peaches by peeling and pitting them; blanch for easy peeling, then chop finely.
  2. Wash jalapenos, cut off tops, slice open, remove seeds, and finely chop.
  3. In a large saucepan, combine chopped peaches, jalapenos, lemon zest, and lemon juice.
  4. Heat over medium-high, bring to a gentle boil, and stir in sugar until dissolved; cook for 15-20 minutes until thickened.
  5. Test for doneness by dipping a spoon; if it coats, your jam is ready.
  6. Prepare jars by washing with hot soapy water; transfer jam into jars, leaving 1/4 inch space.
  7. Seal jars and allow to cool; store in refrigerator or freezer for longer shelf life.
