A delightful appetizer combining fresh peaches and juicy tomatoes on crunchy toasted baguette slices, topped with whipped ricotta and balsamic glaze.

- 1 baguette, sliced thinly
- 1/4 cup unsalted butter
- 4 garlic cloves, finely minced
- Salt and pepper, to taste
- 1 pint chopped tomatoes
- 3 medium peaches, diced
- 2 tablespoons extra virgin olive oil
- Juice of 1/2 lemon
- A generous handful of fresh basil leaves, sliced or roughly chopped
- 1 cup ricotta cheese
- Balsamic glaze, for drizzling
Instructions
- Preheat your oven to 400°F (200°C) or set your grill to the highest setting. Slice the baguette into 1/2-inch thick slices.
- In a mixing bowl, combine unsalted butter with half of the minced garlic. Mix and spread this garlic butter on each baguette slice and arrange them on a baking sheet.
- Toast the baguette slices in the oven for about 10-12 minutes or grill them for 1-2 minutes until golden brown and crispy.
- In a large bowl, combine chopped tomatoes, diced peaches, and the remaining minced garlic. Season with salt and pepper. Drizzle in olive oil and lemon juice, and toss gently.
- Whip the ricotta cheese in a food processor until smooth. Transfer it to a bowl.
- Spread whipped ricotta on toasted baguette slices, spoon the peach and tomato mixture on top, and drizzle with balsamic glaze. Serve immediately.
Notes
Customize by substituting ricotta with goat cheese, using mint instead of basil, or adding jalapeños for heat.
